2. Cover the mixture when the boiling has calmed. Once you set the heat to low, the boiling should subside within a minute or two. After that happens, covered the pan or pot completely. Many people are used to leaving the lid a little lopsided to let steam come out, but this is the opposite of what you need to do here. It’s easy and fast! Use equal amounts of rice and water. 2 servings: 1 cup rice + 1 cup water. 4 servings: 2 cups rice + 2 cups water. 6 servings: 3 cups rice + 3 cups water. ADD water and rice. Add oil if desired. BOIL water, reduce heat to medium, cover and simmer 10 minutes or until water is absorbed, then fluff.
Drain completely. Add rice, 1 1/4 cups boiling water, and salt to a 1-quart casserole dish with a tight fitting lid (see Cook's Note). Cover and place casserole in oven. Bake rice 17 to 20 minutes or until tender. Remove from oven and let stand, covered, for 10 minutes.
How to cook perfect basmati rice. Pour the rice and water together in a medium sized pot. Swish them both around using your hands to rinse the grains, and then carefully drain the cloudy water.
